We try to be as seasonal as possible. Those dishes that can change regularly do. The first days of Jersey Royals, asparagus, rhubarb and the like are cause for joy and celebration, months of absence making them taste even better.

As Londoners, we’d been on the receiving end of out-of-towners from places like New York, Hong Kong and Paris, rolling into our patch and telling us how they were bringing enlightenment where there was only darkness. There was also the
