And, we\u2019ve created this all-new list (except for some of our sacred Hawksmoor classics) with that thought in mind. So, lots of bubbles and top-shelf liquors to help the decadent you kick back and celebrate with friends and family. <\/p>\n\n\n\n<p>You can expect the classic steakhouse cocktails you know and love &#8211; but brought into 2022 with techniques and artistry honed by the team to take them to the next level. So, let\u2019s meet some of the line-up\u2026<\/p>\n\n\n\n<p style=\"font-size:22px\"><strong>HIGHBALLS, FIZZES &amp; APERITIFS<\/strong><\/p>\n\n\n\n<p>A properly made drink before a hunk of seared beef is a ritual. We\u2019ve ramped up some of these openers the only way we know how.<\/p>\n\n\n\n<p><strong>BEE &amp; BUTT FIZZ<\/strong><br><em>Aberfeldy 12 y.o Single Malt, Pear, Amontillado Sherry, Andrew\u2019s Honey, Soda<\/em><\/p>\n\n\n\n<figure class=\"wp-block-image alignwide size-large\"><img decoding=\"async\" src=\"https:\/\/www.hawksmoornyc.com\/wp-content\/uploads\/Image-Bee-and-Butt-Fizz-1-768x1024.jpeg\" alt=\"\" class=\"wp-image-1827\" title=\"\"><\/figure>\n\n\n\n<p>Drawing inspiration from his homeland, Bar Manager Adam was keen to take our Hawksmoor Calling and give it a cold-weather-makeover. This cocktail is an ode to the Scottish Highlands and two of its most treasured bounties: <strong>mellow single malt whisky aged in Sherry butts<\/strong> and <strong>floral heather honey<\/strong>. Aberfeldy is known as the \u2018honeyed malt\u2019 and works really well with <strong>Andrew\u2019s Honey, <\/strong>sourced just blocks away at the Union Square Green Market. To make this drink we batch all the ingredients together and then <strong>carbonate it <\/strong>to keep everything light and refreshing.<\/p>\n\n\n\n<p style=\"font-size:22px\"><strong>THE ULTIMATES<\/strong><\/p>\n\n\n\n<p>The beating heart of this new menu is classic steakhouse cocktails. We\u2019re introducing the fourth varietal of our Ultimates with the <strong>Ultimate Vodka Martini.<\/strong><\/p>\n\n\n\n<p><strong>ULTIMATE VODKA MARTINI<\/strong><br><em>Absolut Elyx Vodka, Dolin Dry Vermouth<\/em><\/p>\n\n\n\n<figure class=\"wp-block-image alignwide size-large\"><img decoding=\"async\" src=\"https:\/\/www.hawksmoornyc.com\/wp-content\/uploads\/2022-04-18-Hawksmoor3625PSD-8bitJPEG-2500px-Q80-1-1024x711.jpg\" alt=\"\" class=\"wp-image-1828\" title=\"\"><\/figure>\n\n\n\n<p>The drink also uses the insulated flask technique that has won critical acclaim <strong><a href=\"https:\/\/punchdrink.com\/articles\/an-endless-quest-for-the-coldest-martini-hawksmoor-nyc\/\" target=\"_blank\" rel=\"noreferrer noopener\">as the coldest martini in NYC<\/a>.<\/strong><\/p>\n\n\n\n<p style=\"font-size:22px\"><strong>THE SECOND GOLDEN AGE<\/strong><\/p>\n\n\n\n<p>Although there is a time and a place for a bright blue cocktail, the 70s and 80s were a dark moment in the history of the cocktail. Thankfully, from the mid-1990s things began to markedly improve, the sickly sweetness and lurid blueness dialed down and top-shelf booze got a look in. So, in an homage to <strong>the era that resurrected the craft of the cocktail <\/strong>we\u2019ve revived a few of our favorites from the Second Golden Age that followed, brought up to date a little but still with plenty of millennial exuberance.<\/p>\n\n\n\n<p><strong>EARL OF HOUSTON<\/strong><br>Sipsmith Gin, Earl Grey Tea, Lemon, Bergamot, Clarified Milk Punch<\/p>\n\n\n\n<figure class=\"wp-block-image alignwide size-large\"><img decoding=\"async\" src=\"https:\/\/www.hawksmoornyc.com\/wp-content\/uploads\/Hawksmoor-NYC-Earl-of-Houston-1-1024x683.jpg\" alt=\"\" class=\"wp-image-1829\" title=\"\"><\/figure>\n\n\n\n<p>We\u2019re paying homage to the New York institution, <strong>The Pegu Club, <\/strong>which was sadly lost to the pandemic, is an ode to the namesake\u2019s Earl Grey MarTEAni. We infuse <strong>Sipsmith Gin with Earl Grey tea <\/strong>and then combine it with cold brew Earl Grey, Italicus. lemon juice and honey. We then <strong>clarify this into a milk <\/strong>punch to create a <strong>wonderfully rich and creamy texture.<\/strong><\/p>\n\n\n\n<p style=\"font-size:22px\"><strong>NIGHTCAPS<\/strong><\/p>\n\n\n\n<p>Whether you\u2019re into sweet and indulgent or bitter, dark, and serious. These are the perfect after-dinner drinks.<\/p>\n\n\n\n<p><strong>UPSIDE-DOWN<\/strong><br><em>Johnnie Walker Black Label, Clynelish 14 y.o., Madeira, Pineapple<\/em><\/p>\n\n\n\n<figure class=\"wp-block-image alignwide size-large\"><img decoding=\"async\" src=\"https:\/\/www.hawksmoornyc.com\/wp-content\/uploads\/Hawksmoor-NYC-Upside-Down-1-1024x683.jpg\" alt=\"\" class=\"wp-image-1830\" title=\"\"><\/figure>\n\n\n\n<p>This drink draws inspiration from one of Bar Manager Adam\u2019s favorite cocktails: <a href=\"https:\/\/twitter.com\/HawksmoorNYC\/status\/1528822596120285192\" target=\"_blank\" rel=\"noreferrer noopener\">The Rob Roy<\/a>. We use both Johnnie Walker Black Label and Clynelish 14yo; the single malt bringing some weight and richness and both whiskies giving a hint of smoke. We\u2019ve switched the classic sweet vermouth element for Madeira, a Portuguese fortified wine, and finish everything off with a pineapple liqueur.
