Our holiday cocktail line up

You might remember that last year we teamed up with some of our favorite neighborhood bars across our favorite cities to shake up four limited-edition holiday serves.  

And this year…we’re doing it all over again. From New York to Dublin, Chicago to Edinburgh, we’re bringing together four brilliant neighborhood bars to create something truly special for the holiday season. Each with its own style and story to tell. Four cities, four unique cocktails and four perfect excuses to celebrate.  

All cocktails will be available at Hawksmoor Chicago from the 1st December. $20 each.  

Baked Alaska Martini

Just under 3 miles southeast of Hawksmoor New York sits Bar Snack, a much-loved East Village hangout led by internationally renowned bartender Iain Griffiths and a recent Tales of Cocktails nominee. They’re bringing to the menu a holiday twist on a classic martini (a Hawksmoor favorite, naturally).  

Made with Fords Gin, washed with milk, and lemon juice, and lifted with a touch of Cynar, Fino Sherry and Green Chartreuse, it’s a cocktail that feels both silken and refined. It leaves the palate dry yet softly creamy, with a gentle herby finish, all crowned with some playful lemon pearls.  

Ingredients: Milk-washed Fords Gin, Green Chartreuse, Fino Sherry, Orange bitters.  

Limited edition Christmas cocktail - Santa's Custard Sazera

Santa’s Custard Sazerac

Originally a traditional pub dating back to 1915, Sackville Lounge has come a long way from its old-school roots. These days it’s one of Ireland’s most talked-about cocktail bars, even a recent contender for World’s Best Cocktail menu. 

For our festive collaboration, they’ve put together a drink that feels like a hug in a cocktail form (what more could you want this holiday season?). All comforting vanilla warmth with a hint of gentle spice, it’s a proper seasonal twist on a classic. Using Woodford Reserve whisky infused with vanilla custard, the cocktail is gently stirred and enriched with brandy bitters and a touch of sugar, resulting in something unmistakably festive.  

Ingredients: Woodford Reserve Bourbon, Seven Tails XO Brandy, Clear Custard & Demerara.  

Gus’ Holiday Punch

Opening just 10-minute walk from our Hawksmoor, Chicago just last year, Gus’ Sip & Dip has quickly become one of River North’s favorite hangouts. A sweet bar that takes its cocktails seriously but never itself too seriously so a collab only felt right and what a stone-cold banger we’ve got… 

Featuring Glendronach 12-year-old Scotch infused with freeze-dried apples. Bold whisky character, bright zing, and irresistible depth make it the kind of punch you’ll want to savor all winter long.  

Ingredients: Glendroncah 12 year old scotch, apple, amontillado, lemon, Rooibos (milk punch).

Sitting in the heart of Edinburgh’s Old Town, we have Hey Palu. A cozy, stylish cocktail bar infused with a little touch of Italian aperitivo magic. They’ve crafted a playful yet creamy blend cocktail with mint and chocolate and a splash of tequila for fun. 

A festive serve full of personality.
